For one of the not for profit organization, we are developing reports. We have mysql as our transactional database. For proof of concept we have utilized SQL server developer edition, SSAS( to build cube) and SSRS for reports and published it on report server. Can this be scaled to our production as this a not for profit organization or we need to go for enterprise license of SQL Enterprise edition and then user SSAS and SSRS.

OR Is there any other better way for OLAP and reporting using other opensource tools.

While not open source icCube is providing a community edition that might be enough for your needs. On the hand, migrating the cube definitions from SSAS should not be an issue. On the other hand, you'll need to redo your reports.
